What brings Mexico and China together? It started with the Spanish galleons that first sailed the Pacific in 1565 and brought to Mexico an Asian girl kidnapped by pirates and known as La China Poblana.

Located within The Cosmopolitan of Las Vegas, this is not the Chinese or Mexican food you might expect. Inspired by José Andrés’ travels through China and Mexico, China Poblano brings authentic ingredients and techniques from both cultures, but then adds José's unique brand of creativity to produce something amazing.

Chef José Andrés is relocating his America Eats Tavern at the Ritz-Carlton in Tysons Corner to the historic Georgetown neighborhood in Washington, D.C. in 2017.  The restaurant was first conceived as a pop-up in Penn Quarter before relocating to Tysons Corner in 2014.

Named for the WPA’s Federal Writers Project that was created during the Great Depression to provide work for unemployed professionals by sending them out to document America’s relationship with food (dubbed, “America Eats!”) America Eats Tavern celebrates iconicAmerican dishes featuring native ingredients and a robust Virginia wine selection.  

Inspired by the storied past of this unique location at Dorado Beach, Puerto Rico, José Andrés introduces Mi Casa at the new Ritz-Carlton Reserve.

Here, traditional flavors from the island, paired with the cuisine of his native Spain, are transformed by modern presentation and techniques. Breakfast and dinner served daily in a relaxed, luxurious, beachfront setting evokes the feeling of dining in José’s own home.

Pepe is available for private events 7 days aweek. He is also rolling through DC, Maryland, and Virginia for lunch every day of the week from 11:30 PM-2 PM, and for happy hour, dinner, and late night service.

China Chilcano celebrates the fascinating intersection of cultures that defines the culinary spectrum of Peru, interpreted through the inimitable lens of chef José Andrés and his talented team. The spirit of Spanish cuisine comes alive at José's first culinary destination outside the United States: J by José Andrés, set within the W Mexico City Hotel.
